Chai is the distinctive cardamom-spiced tea of the Middle East, Western Asia, and Eastern Africa. An essential aspect of chai is that all the ingredients are brought to a boil together although a pleasant cardamom tea can also be made by adding spiced milk to traditionally-brewed tea.

4 teacups water
4 teacups creamy milk
6 teaspoons plain black tea
12 green cardamon pods, slightly crushed
1/2" ginger root, sliced
Honey or Sugar
To taste: cinnamon stick, whole cloves, whole black or white peppercorns and maybe even fennel or anise seeds
Delicious with dishes from East Africa or India.
