Pears in Red Wine

Ingredients
1/2 cup sugar
1 cup red wine (Burgundy)
2/3 cup water
Strip of lemon rind
1/4 teaspoon ground cinnamon
6 medium dessert pears
1/3 cup blanched almonds, split and toasted (for decoration)
Directions
- Put the sugar, wine, water, lemon rind and cinnamon in a large pan and dissolve the sugar slowly over gentle heat.
- Peel the pears, cutting off the core at the base and leaving the stalks on.
- Add to the pan, cover and gently simmer for 40-45 minutes or until soft and colored.
- Remove the pears carefully from the pan and place, standing upright, in heatproof glass dishes. Set aside.
- Increase the heat and boil the liquid in the pan rapidly until it thickens and is syrupy. Take off the heat and allow to cool slightly. Remove the lemon rind, then pour over the pears.
- When the pears and syrup are quite cold, chill in the refrigerator for several hours, spooning the syrup over the pears from time to time.
- Just before serving, sprinkle over the almonds.
