Chocolate Macaroon Cake

Ingredients
200g dark chocolate
160g butter
5 eggs, separated
1 1/2 cups castor sugar
1 tablespoon brandy
2 cups dessicated coconut
cocoa powder to dust
Directions
- Preheat oven to 170 degrees (C) and grease a 24cm square cake tin
- Place chocolate and butter in a large bowl over a saucepan of boiling water.
- Remove bowl from the heat and stir in the egg yolks, 1 cup of the measured sugar and the brandy.
- Stir in the coconut.
- In a separate bowl, whisk the egg whites until soft peaks form. Sprinkle over the remaining 1/2 cup of sugar and beat briefly to combine. Gently fold this meringue-like mixture into the chocolate mixture.
- Spoon mixture into prepared cake tin and bake for 50 minutes, until risen and firm.
- Dust with cocoa powder once cold and slice to serve.
