Ingredients

3 tablespoons olive oil
4 chicken breasts with skin (or a 3 1/2 pound chicken cut up)
2 large cloves garlic, minced
1 cup dry white wine
1/2 cup low-sodium chicken broth
28-ounce can whole peeled tomatoes, lightly crushed with your hands (juice reserved)
1/4 cup tarragon or white wine vinegar
3 tablespoons unsalted butter
2 teaspoons roughly chopped fresh tarragon leaves
Kosher salt and freshly ground black pepper
