Spiced Rice

Ingredients
2 tablespoons safflower oil
1 onion, peeled & chopped
1 large garlic clove, peeled & crushed
1 1/4 cups long grain brown rice
1 teaspoon turmeric
3 cloves
3 cardamom pods
1 bay leaf
2 1/2 cups boiling water
Sea salt
Freshly ground black pepper
Directions
- Heat the oil in a heavy saucepan and sauté the onion for 7-10 minutes, until tender but not browned.
- Add the garlic, rice and spices and sauté for 1-2 minutes, stirring all the time.
- Pour in the boiling water and add a seasoning of salt and pepper.
- When the mixture is boiling vigorously, give it a stir, then turn the heat right down and put a lid on the saucepan.
- Leave to cook very gently for about 45 minutes, then remove from the heat and let stand, covered, for a further 10 minutes.
- Fluff the rice gently, removing the bay leaf and spices, before serving.
Delicious with spiced lentils and root vegetables in turmeric and coconut sauce.
