Roasted Beet Salad
with Walnuts and Goat Cheese

Ingredients
1/2 cup walnut halves
2 teaspoons olive oil
1/8 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
8 baby beets, trimmed and washed
2 tablespoons plus one extra teaspoon extra virgin olive oil
1 teaspoon red wine vinegar
Kosher salt and freshly ground black pepper
1/2 lb fresh spinach, arugula or mache leaves, de-stemmed and washed
2 teaspoons minced shallots
2 teaspoons minced chives
2 teaspoons minced chervil leaves
2 teaspoons Italian parsley leaves
4 ounces fresh goat cheese, crumbled
Walnut Vinaigrette
2 teaspoons Dijon mustard
2 teaspoons champagne vinegar
3 teaspoons lemon juice
1/4 cup walnut oil
Kosher salt and freshly ground black pepper

Directions
- Preheat the oven to 350 F.
- Combine the walnuts with the olive oil, salt and pepper, mixing well to coat the nuts.
- Spread on a baking sheet and bake until toasted, about 7-10 minutes.
- Set aside to cool.
- Wash the beets and trim the stems to about 1 inch. Place them in a small baking pan and toss with the 2 tablespoons of olive oil, 2 tablespoons of water, 1/2 teaspoon salt and 1/8 teaspoon pepper.
- Cover the pan with aluminium foil and roast until tender, about 50 minutes.
- Let cool for 20 minutes, then peel the beets by holding them under cold running water and rubbing off the skins.
- Cut into quarters, place in a bowl, and toss with a pinch each of salt and pepper, the remaining teaspoon of olive oil, and the vinegar.
- Set aside at room temperature at least 1 hour.
- Blend the walnut vinaigrette ingredients and set aside.
- Just before serving, toss the salad greens with about 1 tablespoon of the walnut vinaigrette. Season to taste with salt and pepper.
- Place a mound of greens on each plate. Arrange the beets on top, garnish with the walnuts and crumble the goat cheese over.
- Spoon a little additional dressing around each salad and drizzle the plates with a little walnut oil.
