John Dory Fish Boiled in Seawater
Other suitable fish include: groper, hake, whitiing, barracouta, kahawai, sea salmon, trevally, kingfish, yellowtail, miki, mullet, snapper and ling.

4 fillets John Dory
Court bouillon made from:
5 cups seawater
2 dessertspoons white vinegar (or lemon juice)
Handful of parsley
Sprigs of thyme
- Simmer all ingredients except the fish for 3 hours. Strain and allow to cool.
- Heat again until just shimmering and add fish so that it is just covered by the liquid. Simmer gently until the fish goes white and just flakes when tested with a fork.
For whole fish, up to about 4 pounds, allow 8 minutes cooking time per pound.
