Fish Cutlets in Wine Sauce
Suitable fish include: cod, bream, and other lean, medium-flavored fish.

Ingredients
4 tablespoons butter
4 cod cutlets
1 onion, finely chopped
2 1/2 tablespoons chopped capers
Salt & pepper
2/3 cup dry white wine
1 1/4 tablespoons flour
1/2 teaspoon creamy mustard
2 teaspoons chopped parsley
2 eggs, beaten
Lemon slices
Directions
- Heat half the butter in a flameproof serving dish, put in the fish and sprinkle with the onion, half the capers, salt and pepper.
- Add the wine, cover and cook in 350 degree (F) oven for about 20 minutes or until tender.
- Heat the remaining butter in a pan, add the flour, cook for 1 minute. Gradually blend in the liquor remaining in the dish in which the fish was cooked and stir until boiling.
- Add mustard, parsley, remaining capers and beaten eggs.
- Reheat without boiling, correct the seasoning and pour the sauce over the fish.
- Garnish with lemon slices.
