Whitebait, a delicacy in New Zealand, are available fresh January-February.

1 teaspoon flour
1 1/4 cups whitebait (fresh or frozen)
Salt & pepper to taste
- Mix flour to a smooth paste with the milk and then add the beaten eggs. Allow to stand for about 3 hours if possible.
- Heat the butter in a frypan until it starts to turn brown.
- Fold the thoroughly cleaned whitebait (try not to handle them too much) into the batter.
- Stir gently and drop dessertspoonfuls of mix into hot pan.
Delicious with lemon wedges.
