Spiced Lentils

Ingredients
3 tablespoons safflower oil
2 large onions, peeled and diced
4 large garlic cloves, peeled and crushed
4 teaspoons ground coriander
1 1/4 cups lentils, soaked and drained
1 1/4 cups water
Sea salt
Freshly ground black pepper
Directions
- Preheat the oven to 325 degrees F
- Heat the oil in a large, flameproof casserole dish and add the onions; sauté for 5 minutes, until the onion is beginning to brown and soften, then mix in the garlic and coriander and cook for a further 2-3 minutes, stirring.
- Add the lentils and stir them so that they are all coated with the oil and spice, then pour in the water. Bring up to the boil, cover and place in the oven for 40-60 minutes, until the lentils are tender and have absorbed the water.
- Season with salt and pepper
Delicious with spiced rice, root vegetables in turmeric & coconut sauce and a green salad.
