Vegetable Biryani

Ingredients

1 1/2 cups basmati rice
3 tablespoons safflower oil or ghee
Pinch saffron
Pinch turmeric
1/2 teaspoon salt
2 1/2 cups vegetable broth
1 cup chopped onions
2 teaspoons fresh ginger, peeled and grated
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cinnamon
Pinch cayenne pepper
1/2 cup water
1 medium carrot, diced
2 cups small cauliflower florets
1 medium bell pepper, diced
1 tomato, diced
1/2 cup shelled fresh peas
1/3 cup raisins
3/4 cup cooked chickpeas, rinsed and drained
Salt, to taste
Roasted cashews, for garnish

Directions

Delicious with a glass of Zinfandel.
